COTSWOLDS Pan Asian Pop-up
Sakhoba is a new pop-up Restaurant concept showcasing the exciting tastes and textures South East Asian 'street' food.
We create exciting 'street' dishes from China, Hong Kong, Thailand, South Korea, Malaysia and Japan into a fixed tasting menu that our guests can enjoy in one of our pop-up locations around the Cotswolds.
Great Cotswolds Produce
Sakhoba is ideally located to take advantage of the wonderful produce in and around the Cotswolds.
We are taking the traditional ideas and flavours of Pan-Asian food, but applying a European style of cooking, to elevate the dish while maintaining its essence.
PEKING DUCK - COTSWOLDS STYLE
In Beijing and Hong Kong, the duck is roasted until the skin is crispy and the meat well done. Thin pieces of skin with the fat are used as the filling as most cultures in SE Asia tend to only serve meat well done.
But we do like rare meat here, so we decided to pan-roast Gressingham Duck breasts, flavouring the skin with Chinese five spice, soy sauce and honey, cooking the duck to medium rare. Allow to rest, then slice and place into pancakes.
The duck is moist, full of flavour and the fat has rendered down into the meat for even more flavour. Truly delicious, and better adapted to our tastes.

Vietnamese Street Noodles.
Steaming hot broth with rice vermicelli noodles continues to cook the meat or vegetables in your bowl. Most of the stuff is raw, meaning Pho Noodles are great for healthy eating.
